This is probably one of our favorite freezer dinners. It is really simple to prepare and just as simple to cook. We got this recipe from my mother-in-law who is awesome at making and freezing meals for her family because she is a teacher, so she needs those quick and easy meals for the weekdays. Anyway, here are the ingredients needed for Cheesy Ham and Potatoes:
Cheesy Ham and Potatoes
1 (1-lb) bag frozen shredded hash browns
1/2 cup minced onion
2 cans cream of celery soup
1 (8-oz) cream cheese
1 1/2 cups Monterey Jack cheese, shredded
1 1/2 cups cubed ham
1/4 tsp pepper
1/2 cup shredded Cheddar cheese
Soften cream cheese and cream together with soup. Stir in onions, ham, Jack cheese and pepper. Break apart hash browns. Gently stir into cheese mixture. Place in gallon freezer bag. Label and freeze.
To Serve: Thaw. Place in greased baking dish (9x13). Bake covered for 1 hour at 350. Uncover and top with shredded Cheddar cheese. Return to oven until cheese is melted.
